So, I am already compiling calm, instrumental songs I like for my “Students Working Quietly” playlist for when I am a teacher. I want to be one of the teachers that plays soothing music while you work individually (I had teachers that did this and always appreciated it) and has daily warm-up exercises where they play a short classical music piece and you have to count how many instruments you can hear being used to help you ease into paying attention and listening carefully (I had a middle school teacher that did this and I loved it) and I want to be the kind of teacher where kids want to hang out in my room at lunch with their friends and I want to be somebody’s favorite teacher and I want to help kids like school and get ready for college (and I want to teach them not to use run-on sentences like I did and also not to start a sentence with “and”).

I am excited.

Easy Chocolate Quinoa Cookies

I made quinoa cookies today! I made some changes to a recipe I found online and thought you might want to read it if you want to make some easy gluten-free cookies. (I added and subtracted some things, it had like coconut flakes and homemade date syrup that I didn’t want, but if you’re fancy and making date syrup sounds like your biz, the original recipe is from includingcake.com.)

I used:

1 and 1/2 cups of cooked quinoa

1/4th cup of peanut butter

3 teaspoons of maple syrup

and a little less than 1/4th cup of chocolate chips.

I also added about a tablespoon of butter.

I mixed it all up with a mixer (it said to mix it with a spoon to be careful with the chocolate chips, but that takes forever and a half, your call.)

I dabbed little balls of the mixture onto a greased baking sheet and put a chocolate chip on top of each one.

The recipe said to cook them at 320 degrees Fahrenheit for ten to fifteen minutes. I did and was left with warm mushballs. I waited for them to harden up like cookies sometimes do and they didn’t. It ended up taking about 30 minutes total in the oven plus cooling time to get a good cookie consistency.

They are super good and easy peasy to make!
